Tartness Behind the Sweet
Cherry flavor carries some tartness behind the sweetness, and where the profile sits between the two can be adjusted per project. A softer profile keeps the acid low and lets the sweet cherry note lead, while a sharper profile raises the acidity for more bite in the finish. Citric acid reads sharp and short, while malic acid reads rounder and longer, and blending the two adjusts the sourness curve.
Flavor Intensity by Program
Flavor intensity can be set from a lighter candy-cherry note to a fuller cherry profile with more aroma. The twin-cherry format gives the flavor a larger piece to work in, so intensity reads differently here than on smaller fruit pieces. The approved level is fixed at sampling and recorded in the specification.
Natural and artificial cherry flavors are both available, and the choice is written into the specification so reorders run the same type.
Flavor direction is confirmed on physical samples before production, and the approved sample is kept as the reference for reorders.
The Sour-Sanded Option
The range runs oiled, sugar-sanded, and sour-sanded finishes. The sour-sanded version adds acid at the surface, so acid arrives before the cherry note, while the sugar-sanded version delivers sweetness first. The eating sequence differs with each finish.
